Just a quick post to catch you up on what I've been making lately. Sorry to have not posted in a week, but it seems all I've been making are those Peanut Butter Crispy Bars which I've already blogged about twice! I did take some quick pics of other things I'd made, so although a proper post is coming up, I wanted to fill in the gap with these breakfast items.
It seems everyone has been making Peter Reinhart's bagels these days- I've seen them all over the blogosphere. Although I bought his book right when it came out, I'd never made the bagels so I decided to jump in after seeing an abbreviated version of the recipe online. It's true what everyone says- they are EASY, fun and honestly no more work than getting in your car, driving to the grocery store and buying a bag of not-as-fresh-and-tasty bagels. You probably have everything you need to make them already, so why not give it a go? My only regret is not brushing the tops with egg wash so my toppings (onions and poppy seeds) would stick better, but I'll make sure to do it next time. Another great thing is you can make them whatever size you want- I find that most bagels in bakeries are the size of Plymouth Rock and they tend to sit in my stomach for the better part of the day.
I also reached back into my old blog files and made this Glazed Apple Lattice Coffee Cake I hadn't made in years- it's a forgotten favorite and I'm glad I dug it out! This buttery, sweet dough is so easy to handle and is scented with orange zest which is a great compliment to the cinnamon apples stuffed inside. It's finished off with a glaze made from freshly squeezed orange juice and powdered sugar, but I forgot to take a photo so you'll have to forgive me! Like the bagels, this is probably something people see and think is complicated to make, but trust me- it really isn't.
The last random thing I thought I'd share is this breakfast I've become addicted to lately. It isn't the prettiest thing in the world, but it's so good and so good for you. I dice up red onions, red or yellow bell peppers and kale- I prefer black kale (cavalo nero) but I only had curly kale which works great too. Add them all with one minced clove of garlic, saute until tender, then add chopped turkey lunch meat (turkey or chicken sausage would be great as well) and fold in three egg whites. Eat it with one slice of whole grain toast smeared with a wedge of soft, light cheese and a large mug of piping hot coffee and it's seriously the perfect breakfast.

My favorite breakfast is an everything bagel with roasted tomato and garlic cream cheese! OR poached eggs, medium, with toasted sourdough or multiseed bread.
Well I have come to an understanding with my 42 year old body...I know I cant eat like I'm 22, so I have tried to cut out things like Chorizo Burritos. I loved it when my mom would make them for breakfast it was the perfect on the go breakfast. Although remembering the greasy napkin it was wrapped in made me realize that it wasn't all that great for me. My solution Soyrizo in a whole wheat tortilla, aww almost like mom use to make...haha. Not bad if I do say so my self and if I want to really indulge soyrizo and potatoes yummy although you do have to be careful with your sodium intake, soyrizo tends to have a little more salt that the regular chorizo but its still a great alternative...
uh!! I love Poached eggs as well and it's been a while since the last time I made them... I will try them with this bagel recipe.

An: I use Soyrizo once in awhile to make empanadas for my vegan friends. It's a great substitute but isn't super healthy either! Guess it has to have some grease to mimic the original.
